We made it easy to make by adding the traditional black tea and spices of Indian chai tea and blended that with butterfly pea flower. This yields a nice dark blue drink. To finish for the proper color add milk, cream, coconut milk or your favorite ice cream that still has that white color.

Full Recipe: Hot: Heat 12 ounces of water to near boiling, about 205F. Steep 2 tablespoons of Blue Milk Chai, making sure to get lots of the blue butterfly pea flower, for 3 minutes. Strain into your glass. Add a couple scoops of your favorite light colored ice cream, or any other dairy, non dairy milk to taste. Stir well but try not to melt all of the ice cream before you take a sip. The hot and cold variance is delicious!
For Iced: Heat 12 ounces of water to near boiling, about 205F. Steep 3 to 4 tablespoons of Mermaid Chai, making sure to get lots of the blue butterfly pea flower, for 3 minutes. Fill an empty glass with ice and strain over ice leaving room at the top for your next ingredient. Add a scoop of light colored ice cream or top with your dairy or non dairy milk to taste. Stir or let the colors develop for a bit on their own for a Pinterest worthy cup!
For an alcohol version, make as directed above and use a white chocolate liquor or a shot of Irish Cream.

Butterfly Pea Flower, Ceylon CTC Black Tea, Cardamom, Ginger, Black Peppercorns, Anise, Cloves, Fennel, Cinnamon

Iced 16oz cup: 3 tsp tea steeped for 3 minutes in about 8 to 10 ounces of water. This concentrates the tea a bit so your beverage isn't watered down. Fill glass with ice, pour and strain brewed tea into your glass. Enjoy! Hot: 1 tsp per 8 ounces of water steeped for 3 minutes. Strain and enjoy!
