Green Tea Peach Bellini Recipe

Ingredients:

  • 1 peach, ripe and sliced (or ½ cup of peach nectar)
  • 1 teaspoon matcha green tea powder  
  • 1 cup hot, not boiling, water (approximately 175 degrees)
  • 1 bottle of Prosecco or sparkling white wine, chilled
  • Ice cubes (optional, for chilling)
  • Fresh peach slices or mint leaves for garnish (optional)

    Instructions:

    • Prepare the Green Tea: Whisk matcha into hot water until fully dissolved. Allow the tea to cool to room temperature, or chill it in the refrigerator to speed up the process.

    • Blend the Peaches: If using fresh peaches, blend slices in a blender until smooth to create a puree. Skip this step if using peach nectar.

    • Mix the Peach and Green Tea: In a pitcher, combine the cooled green tea and peach puree (or nectar). Stir well to ensure the mixture is fully combined.

    • Assemble the Drink: Fill each champagne flute about one-third full with the green tea and peach mixture. Ice cubes can be added to the glass beforehand if desired.

    • Top with Prosecco: Gently pour Prosecco or sparkling white wine over the peach and green tea mixture in each flute, allowing it to mix and create a light foam at the top. Leave a bit of room at the top to prevent it from overflowing.
